Is there anything better than a softly fried egg with that gloriously runny yolk? No, really. Is there? I can't think of anything. Egg yolk running into anything instantly makes it a little more delicious.
This is the perfect breakfast for that morning after a night out when maybe you've had a little too much fun. Not that I have first had knowledge of anything like that.....
It's filling without being heavy and good for you. After you've been bad.

Spicy Fried Egg Topped with Avocado and Crumbled Feta
The Kinfolk Table
makes 1 serving
Ingredients:
1 teaspoon coconut oil (or oil of your choice but if you aren't substituting coconut oil into at least some of your cooking, you need to start)
1 large egg
salt and freshly ground black pepper
1/2 avocado, pitted and sliced
feta cheese, crumbled
Sriracha
a few cilantro leaves for garnish (my addition)
Directions:
Heat the oil in a small pan over medium-high heat until shimmering. Add the egg and season with salt and pepper. Cook for 3 to 6 minutes or until the egg white becomes opaque and the yolk sets to the desired doneness.
Transfer the egg to a plate, then top with the avocado and crumbled feta and sriracha to taste Serve immediately.
