It's National Pancake Day. I don't usually pay attention to these types of things unless they give me an excuse to have an extra Margarita or glass of wine, but damn if pancakes didn't sound good today.
It's about 150 degrees below zero today with 300 mile an hour winds (after being a balmy 73 on Sunday....WTF Alabama?) so a little comfort food seemed like a good idea.
And if you're gonna go, ya might as well go big.....in the form of Banana Nutella and Oatmeal. BOOM!
These are easy peasy to mix up, but you have to babysit them a tad when your cooking them.....chocolate and a hot skillet can be tempermental. And I made the mistake of buttering my skillet for the first batch. Don't do that either. Medium to medium low heat with a non-stick pan and you're golden.
Make these. Even if it's not National Pancake Day.
Banana Nutella and Oatmeal Pancakes
Makes approx. 8 pancakes
Ingredients:
1 cup all purpose flour
1/4 cup quick oats
1 teaspoon baking soda
2 tablespoons granulated sugar
1/4 teaspoon kosher salt
1 large ripe banana, mashed
1 cup buttermilk
1 tablespoon extra virgin coconut oil
1 large egg
1/2 teaspoon pure vanilla extract
1/4 cup Nutella
Directions:
In a large mixing bowl add the flour, oats, baking soda, salt, sugar, banana, buttermilk, coconut oil, egg and vanilla, stirring until well combined Gently stir in Nutella, only swirling. Do not fully mix in.
Spoon batter into a hot, non-stick skillet over medium (to medium low) heat. With spoon, form the batter in a round pancake working quickly. Let cook for about 1 minute, until batter starts to bubble and set up. Flip and cook for an additional minute, until golden brown. Transfer to a plate and continue cooking remaining pancakes.
Serve with syrup or fruit.
