TWD - Savory Corn and Pepper Muffins


This weeks TWD selection was made by Rebecca of Ezra Pound Cake (one of my favorite blogs, btw!) and Mr. B was probably more excited about this one than I was.  Corn muffins are his favorite, but I've never been good at making them....always too dry.

So, based on Dorie's track record, I had high hopes for these.....Dorie would never give me a recipe for dry muffins, right?

She didn't.  He liked them and they were pretty moist, but I do think he would have preferred I make them the more traditional way without all the veggies.




I actually liked the veggies, but would have preferred more heat, so next time I'll remedy that!


The recipe called for one table spoon of chili powder and I added two tablespoons of ancho chili powder, but it still wasn't enough.



I had some of my famous chili in the freezer.....I think almost everyone served these with some sort of chili....and the muffins were perfect crumbled up in the soup.



Someday I'll actually write down my chili recipe as I'm throwing it together.  It's nice and spicy with tons of meat and beans.  Yummy!
